Another sourdough post, this time about my experience milling flour at home. Where fresh milled flour really shines is in flavor. The complexity and nuances of each grain comes through, deeply rich and nutty. I’ve baked with both fresh milled hard red winter wheat, and spelt, and loved each. The crust, crackly, and shinier! The crumb is so so tender, softer than an everyday kind of loaf.

Although I felt like I “studied” hard before baking my first loaf, there were things I wish I would have known before starting. I’m writing this post today to share the top 5 sourdough starter tips, answer the most common questions I’ve received, and hopefully squash your fears of sourdough baking. Because I firmly believe that anyone can do it! You don’t need to have years of baking experience, nor understand scientific terms. You don’t need an abundance of cooking tools or a special oven. All you need is flour, water, and salt…. they do all the work for you. Isn’t that crazy?

I’ve been searching for a good baked falafel recipe for what feels like forever. None of them have ever been good enough to make twice. Whether they required too much planning, were too crumbly and dry, or completely flavorless…. I had given up on making them at home.
But this recipe that comes from the just released Minimalist Kitchen book, by The Faux Martha (which I’m giving away a copy!) erases all of the bad ones. So so good! I made the baked falafel into a salad, that I’m sharing with you today.

I picked this asparagus recipe from a new cookbook on my shelf, The Pretty Dish, to share with you since spring is finally here (even though we’re getting snow today in Minnesota 😐), and Easter is this Sunday. As Jessica says, “Asparagus is one of the few veggies I can take to a gathering and know that it will be eaten with gusto.”
And eaten with gusto it was, in this house. Brian and I ate every single spear straight off the pan. Here’s the winning combination:
smoky salty bacon
the umami of Parmesan
and the golden child of spring — asparagus!

If you’ve never made homemade peanut butter, you should know three things.
It’s incredibly, ridiculously easy. Just grab your blender or food processor and go.
It’s much cheaper than spending $7 for an overpriced jar at Whole Foods.

We recently escaped the snow and visited Fort Myers, Florida. The warm, 80 degree days were fabulous, and we found several local places to eat in Fort Myers, hidden gems, that I’m sharing with you today, and the main reason to go — beaches! And the sun soaked 80 degree days. The softest white sand, blue and turquoise water, and some of the best shelling in the world. Don’t miss Barefoot Beach Preserve, just south of Fort Myers Beach. You can walk along the entire shoreline, and it is much less crowded than other beaches. Read on for more details.

Even for someone who considers the kitchen their favorite place, when I hear the word “risotto” I think “fussy”. My attempts in the past had proven to be marginal at best, with a tendency to overcook and end up with mushy rice that could only be saved by turning them it into risotto balls.
I resolved to try again, and find a foolproof method for making great risotto without a lot of stirring, or thinking. I stumbled upon an article from Cooks Illustrated that employed a different technique that I’ve now played around with for a week, and tweaked to my liking. And in the meantime, I’ve also created a roasted fennel and spanish olive relish to top it with that hits all the right notes.

I longed for a gluten free coffee cake that met bakery style standards. A thick, crackly, buttery top, and the softest crumb underneath. Showered with powdered sugar, sliced into squares, and eaten with a boatload of happiness. This is that cake. Impeccably moist, made with walnuts, warm spices, and a secret ingredient: sweet potato puree. You’ll probably notice that the cake is a bit darker in color, and this is why! But the sweet potato also gives it just the texture I was looking for thanks to its moisture.
