okay, it’s not traditional. 😬 but! 🍊Lots o okay, it’s not traditional. 😬 but! 🍊Lots of citrus lead to incredible flavor in this #SourdoughDiscard Soda Bread and a tender, scone-like crumb I can get behind. 💫😋 I’ve been working on this new recipe over the past few weeks and can tell you it’s an unconventional Soda Bread, in a good way! The depth of flavor from the sourdough discard meets the fruity oils of the citrus zest, and it’s pretty magical. I know that’s not traditional, but I really like it this way. I use dried cranberries for pops of juicy tartness instead of currants too, because I always have them on hand. ⠀

p.s. I was inspired to make soda bread after watching the entire season of @nadiyajhussain show, Time to Eat on Netflix with @hollisanne_ . In one of the episodes, she made a soda bread with homemade butter, and I couldn’t stop thinking about it. 👏🏻⠀

🔨 laundry nook renovation! this space is right 🔨 laundry nook renovation! this space is right off the kitchen, and it was a hot MESS. (you can swipe to see the before photos) With a little rework and design changes, we finally have a functional laundry space that flows with the rest of the house. and we did on a tight budget, using $2 a piece cedar fence plank that we painted for the shiplap, butcher block for the counter and shelving, and IKEA base cabinets. ⠀

🏡 when we first moved into this house, there was a washer and dryer that stuck out into this narrow walkway , so our first step was to replace those with an all-in-one washer dryer unit, which you see in that space now. then we could work on the bones of the space. while @bcherney was removing the upper cabinets on the main wall, it still felt so closed in. i asked what the possibilities were for taking out the header, so it would expose more the of the wall and give us height. the next day i heard a lot of commotion, and walked downstairs to see the header was gone. 😂❤️⠀

💡 the electrical had also been in the header, so Brian rerouted that so we could install the wall sconces, and a light switch with timer to save on electricity.⠀
⠀
🧺 really glad we reworked this space! it’s amazing how much more open it feels. and i love that we have a counter for folding clothes, and a shelf for our booze.😅🥃 . and pictures of our cats. 🐈⠀

You'll have the opportunity to ask any questions during class so we can all learn from each other, and I'll have dough at different stages so you can see what it should look and feel like. ⠀

➡️ I’m also doing a Baking Sourdough with Mix-Ins, on March 13th. I’ll teach you when and how to add inclusions to your bread dough, and we'll make 2 different recipes with mix-ins, a Jalapeno Cheddar Sourdough and a Dried Cherry Seeded Sourdough. We'll go through how to know when these types of breads are correctly proofed, and how to score them. I'll also give you tips for creating your own combinations!⠀

I've been using pecan flour from @FisherNutsBrand (in the nut business for 100 years!) in my gluten-free baking because it's easy to use and provides such great flavor, with undertones of maple. 😋You can order the flour on Amazon, I'll add the link to my profile. 📌 RECIPE:⠀
⠀
Makes 5 large waffles⠀
⠀
65 gram @FisherNutsBrand Pecan Flour⠀
70 grams oat flour⠀
2 tablespoons cornstarch⠀
2 teaspoons baking powder	⠀
2 tablespoons cane sugar⠀
1/2 teaspoon fine salt⠀
3/4 cup milk of choice⠀
2 teaspoons vanilla extract⠀
2 large eggs, room temperature⠀
5 tablespoons melted & cooled unsalted butter⠀
½ cup chocolate chips⠀
⠀
•Whisk dry ingredients together, set aside. Whisk milk, vanilla, eggs together.⠀
⠀
•Pour this mixture into dry ingredients, and stir with spatula about 10 times, then stir in melted butter. Continue stirring gently until no flour streaks remain. Let batter rest for 10 minutes so liquid can soak up flour, and thicken batter.⠀
⠀
•Preheat waffle iron. Once batter has rested, fold in 1/2 cup chocolate chips. Use 1/2 cup batter to make your first waffle, and see if that's a good size for you, or alter more or less. Cook on medium high heat, until waffle is golden brown. Eat warm!⠀
