I’m 32. I know that isn’t old – but I do notice little signs of change. It takes longer for my muscles to recover, I can’t stretch nearly like I used to, I see wrinkles and varicose veins peaking through. I remind myself that all of those things are okay, and normal – a natural result of our […]

Last year I set out on a mission to perfect dairy-free ice cream, and I quickly fell in love with this Salty Honey Coconut Milk Ice Cream. I’m not vegan, nor intolerant to dairy (I’ve healed from the issues I had last year), I just really love the taste and the ease of making coconut milk […]

There’s a watering hole just a few blocks away from our place in St. Paul that I can’t stop going to, The Commodore. It was a swanky St. Paul hotel (with a bar) in the 1920’s and 30’s, a time when gangsters made their way through the Wabasha street caves, jazz became glamorous, and women were shortening their […]

this … Summer. The time when food revels in simplicity, just as nature intended, more so than any other time of year. I wait months for the first bite of this, and the first slice of that. And the anticipation and satisfaction is soon followed by fear of the last. Sliced tomatoes with salt and […]

this … I *may* have broken some rules with this two egg omelette. It’s no French classic, but it is an Amanda classic, meaning cook with what you have even if it’s unusual, and improvise as you go. When we returned home from our mini getaway deep in the southern Minnesota woods, I opened the refrigerator the next morning, […]

You may have seen a few sneak peeks on Instagram, but I’m so excited to finally share my Salty Date Caramel Scotcheroos that you can […]

Made with just 5 ingredients, these flourless almond butter cookies are chewy and packed with nutty vanilla, goodness. It’s a one-bowl cookie recipe that everyone loves. They get a sprinkle of sea salt on the top, and are a delicious gluten free cookie! I know what you’re thinking, these are probably just like the standard […]

Before strawberry season passes, you must make this simple beauty of a salad. I’ll admit, our local coop makes an amazing pesto with cashews and pine nuts that I can’t quite recreate at home so I use it as our house pesto. Go ahead and use your favorite too! Take that semi-homemade theme and run with. There are only three ingredients to this tomato-less caprese: sweet and juicy strawberries, fresh mozzarella, and that herbalicious coating.

My inspiration for these non-chocolate dipped strawberries came a few weeks ago, actually by accident. I love to drizzle coconut butter on my oatmeal, which I had just topped with sliced strawberries. The coconut butter hit the cold strawberries and coated them solid, like magic shell does. Bingo. Instead of finishing my breakfast, I took out the carton of strawberries and went on a dipping frenzy to see if it would work.

this … As much as I love sharing a meal with others, I equally enjoy the solo dining experience. And since I typically travel alone, it happens quite often. You’ll usually find me seated at the bar, not because I’m a big drinker (one glass of wine is my max when I’m in an unfamiliar […]

Hi friends! Welcome to The Friday Five, where I’ll be sharing really delicious, really efficient recipes with just 5 ingredients (oil, salt & pepper don’t count, The Kitchn says so ;) – every week.
