✨ Going very savory, very caramelized with these sweet potatoes, and I could not 👏🏻love 👏🏻 them more. #ad Just 5 minutes of prep for these Roasted Sweet Potatoes with @kempscows Mexican Style Sour Cream, pepitas for toasty crunch, smoked paprika and a few squeezes of fresh lime for brightness. So easy and DELICIOUS. Recipe below! 👇🏻⁣⁣

Their Mexican Style Sour Cream, is fresh, creamy, and great to include in dip recipes, salad dressings or to add richness to casseroles or sauces. And of course it pairs perfectly with tacos, enchiladas, and nachos. You’ll notice it’s thinner than sour cream, yet thicker than authentic crema, and super versatile.⁣⁣

📌 Recipe:⁣⁣
Here’s the trick to the VERY BEST roasted sweet potatoes, that I learned from Nik, @abrowntable. Cut your sweet potatoes in half, rub with olive oil and salt, then place in a baking pan and seal with aluminum foil. This steams them first, to help them cook from the inside out. ⁣⁣
⁣⁣
Roast for 20 minutes at 400 degrees F, then remove foil and finish baking until caramelized and a fork just slides through them. They turn out absolutely tender, buttery, and perfect.⁣⁣
⁣⁣
To finish, mix 1/2 cup Kemps Mexican Style Sour Cream with 1 tablespoon fresh lime juice, and dollop onto sweet potatoes. Dust with smoked paprika, flaky salt, a few squeezes fresh lime juice and lime zest!⁣⁣
