Creamy Crunchy Dill Pickle Sandwich

This quick veggies sandwich is for pickle lovers! Between two soft pieces of bread, cucumbers and dill pickles are layered for ultimate flavor and crunch, paired with a dill whipped cream cheese. It tastes fresh and bright, with tangy, briny goodness from the pickles. A thick slice of white cheddar cheese adds the perfect depth of savory flavor and bite. Serve with potato chips or pasta salad for a delicious lunch.

I’ve been on a bit of a pickle bender, if you haven’t noticed. My cheesy Baked Pickle Dip is now requested for every family function, and a savory dill pickle martini is how I choose to wind down a stressful day.

Today I’m sharing what just might be the “sandwich of summer”. With both fresh cucumbers AND tangy pickles, dilly whipped cream cheese, and sharp white cheddar, this Creamy Crunchy Dill Pickle Sandwich is anything but boring.

Inexpensive, filling, plentiful, and vegetarian.
Perfectly balanced between rich and creamy, and crunchy and tangy.

This sandwich is what I make when the fridge is relatively empty but somehow there’s always pickles and a rogue cucumber. It’s what I make when it’s too hot to cook. And it’s what I make when I’m short on time but still want something really delicious.

Anatomy of the Best Pickle Sandwich:

  • sliced cucumber: adds bright, fresh flavor with a crisp crunch.
  • dill pickle rounds: the tangy, briny star!
  • thick slice of sharp white cheddar: brings robust, tangy flavor that stands out.
  • whipped cream cheese with fresh dill: a good sandwich always has a good spread. You buy whipped cream cheese in the container and mix with a dash of mayo, lemon juice, and fresh dill. It’s creamy, herby, and flavorful.
  • dijon mustard: adds a little zing.
  • soft bread: makes the sandwich easier and more enjoyable to bite into and chew against the creamy crunchy filling. It easily molds around the ingredients, helping to keep everything together. I like to use my Whole Wheat Sourdough Sandwich Bread. Or you could make it a total pickle party by using slices of Dill Pickle Sourdough Bread.

How to Make a Pickle Sandwich:

  1. Mix the cream cheese spread ingredients together to combine.
  2. Grab two slices of bread. Spread a thin layer of dijon mustard on each piece. Then divide the cream cheese mixture between each half and spread to coat. To one slice, lay down a layer of cucumbers. Sprinkle with flaky salt.
  3. Then put down a layer of white cheddar, then a layer of pickles. Place other piece of bread, cream cheese side down onto the pickles. Gently press down to adhere. Slice in half and enjoy!

What Goes Well With a Pickle Sandwich:

  • Salty potato chips are always my first choice when it comes to this sandwich pairing! Classic and simple, they add a crunchy texture that pairs well with the softness of the sandwich.
  • If you make this during the winter months, a warm, savory tomato soup complements it well.
  • A light pasta salad with vegetables and a vinaigrette dressing can be a refreshing side.
  • Sweet potato fries add a hint of sweetness and great flavor.

Ingredients

  • 3 tablespoons whipped cream cheese
  • 1 tablespoon mayo
  • 1/2 teaspoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • 1 to 2 teaspoons minced fresh dill
  • few cracks black pepper
  • pinch of salt

to build sandwich:

  • soft bread
  • dijon mustard
  • cream cheese mixture
  • thinly sliced cucumber rounds
  • flaky salt
  • dill pickle rounds/chips (i like Grillo's)
  • 2 slices of sharp white cheddar cheese, 1/4 inch thick (you don't want it super thin)
