Creamy Crunchy Dill Pickle Sandwich

This sandwich is for pickle lovers! Between two soft pieces of bread, cucumbers and pickles are layered for ultimate flavor and crunch, paired with a dill whipped cream cheese. A thick slice of white cheddar cheese adds the perfect depth of savory flavor and bite. A quick vegetarian sandwich that hits all the right notes.

Ingredients

  • 3 tablespoons whipped cream cheese
  • 1 tablespoon mayo
  • 1/2 teaspoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • 1 to 2 teaspoons minced fresh dill
  • few cracks black pepper
  • pinch of salt

to build sandwich:

  • soft bread
  • dijon mustard
  • cream cheese mixture
  • thinly sliced cucumber rounds
  • flaky salt
  • dill pickle rounds/chips (i like Grillo's)
  • 2 slices of sharp white cheddar cheese, 1/4 inch thick (you don't want it super thin)

Instructions 

  • Mix the cream cheese spread ingredients together to combine.
  • Grab two slices of bread. Spread a thin layer of dijon mustard on each piece. Then divide the cream cheese mixture between each half and spread to coat. To one slice, lay down a layer of cucumbers. Sprinkle with flaky salt.
  • Then put down a layer of white cheddar, then a layer of pickles. Place other piece of bread, cream cheese side down onto the pickles. Gently press down to adhere. Slice in half and enjoy!
