Lavender is such a delicate, lovely flavor when done right in food (like this blueberry lavender cheesecake, yum) or drinks – but too much and it can be overpowering and bitter.
I’ve had great lavender cocktails, especially a Bee’s Knee’s, and a warm lavender latte at a local shop this winter that I’m still dreaming about. Both were the inspiration for making homemade lavender syrup, which has now turned my afternoon iced latte into something better than I can get at a coffee shop.
The lavender syrup is not overpowering; I promise it won’t taste overly floral in your latte. The salt brings out the most delicious toffee, caramel-esque notes and adds to how refreshing this latte is. It makes for the perfect pick-me-up on a hot day (just like my Cold Brew Iced Mocha)! Soothing, aromatic, and slightly herbaceous, with a hint of sweetness. It’s a delightful balance.
Lavender syrup is very easy to make yourself with dried lavender; I keep a bottle of it in my fridge and use in many different drinks. Or you can certainly buy lavender simple syrup on Amazon! I prefer homemade because it’s real lavender flavor; whereas sometimes store-bought uses flavor essence.
Here’s what I’ve learned about making lattes at home:
Start with good quality espresso: Use freshly brewed espresso or strong coffee as the base for your iced latte. The quality of the coffee will greatly influence the flavor of your drink.
Use chilled milk: Use cold milk or a milk alternative to keep your iced latte refreshingly cool. This also prevents the ice from melting quickly and diluting the latte.
Sweeten to taste: Adjust the sweetness of your iced latte by adding sugar, simple syrup, honey, or a sugar substitute according to your preference.
Ice wisely: Use large ice cubes or coffee ice cubes to prevent your drink from becoming watered down too quickly. You can even freeze leftover coffee into ice cube trays for a stronger coffee flavor.
Mix well: Stir or shake your iced latte well to ensure that the espresso, milk, and flavorings are thoroughly mixed together.
Salted Iced Lavender Latte

Pour espresso, simple syrup, and flaky salt into a drinking glass. Stir well for 15-20 seconds to combine.
Add ice, to your liking. Pour milk over the top. Stir to combine.
You can also make this a shaken latte by making this recipe in a mason jar, screwing the top on tight, then shaking it to combine. This makes it a bit frothy, which is delicious!
