Winter White Pizza with Delicata Squash & Gouda

What is it about pizza that just says love? I don’t think I’ve ever met a person who doesn’t like a little (or a lot) of either. Sharing something so unfussy, casual, and comforting just feels good.

The first fall that Brian and I were dating, we spent two months in North Carolina fixing up his other home (how I managed to get him to stay in Minnesota, I’ll never know) so we could sell it. We got used to many hours of scrubbing, painting, and chasing down carpenters.  We’d start our days with Dunkin’ Donuts coffee and many times end it with pizza delivery and red wine in solo cups.

I cherished the simplicity, and this side of him that spoke “easy-going.” It certainly wasn’t gourmet, but it kept our bellies and hearts full.

Our style is a little different now, me making a batch of Zoe’s gluten-free pizza dough and throwing little pies throughout the week, or when I’m pressed for time, popping Udi’s Gluten-Free crust into the oven and 10 minutes later we’re noshing on this Winter White Pizza with Delicata Squash & Gouda Cheese.

I was never a “white” pizza (sans red sauce) fan until I grew older, which is probably pretty typical. As my food curiosity started to expand, I realized that seasonal ingredients really shine when they aren’t covered up by red sauce.

There are so many good things going on in this seasonal pie, and I have to say, with those golden rings of sweet squash, she’s a looker. I brushed the crust with olive oil (which it gives it flavor and helps it brown), then rubbed a garlic clove over to infuse it with just a little something, something.

There are less than a handful of colorful toppings, yet they all play an important role. The arugula is the peppery bite to the sweetness of the delicata, whose soft texture contrasts the little bit of crunch from the Udi’s crust – which is hands down my favorite store-bought gf crust. The red onion packs a savory jab, and the cheese….. let us not forget the cheese. The gouda is so creamy! And because of that, it melts beautifully. But I also love the salty, briny addition of the parmesan. Together they’re the perfect pair.

Love is pizza, and pizza is love. As long as you cut it in squares. ☺ xo

One pizza serves 2 people if you're using the Udi's Gluten-Free Crust so I like to make 2 at once, as the leftovers reheat perfectly in a toaster oven.

Ingredients

For squash

  • 1 small delicata squash, ends cut off, then cut into 1/4 inch rings
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon salt

For pizza

  • 2 Udi's Gluten-Free Pizza Crusts - which you can find in the frozen section
  • 3 tablespoons olive oil, divided
  • 1 clove garlic, cut in half lengthwise
  • 2 cups arugula, coarsely chopped
  • 3 tablespoons thinly sliced red onion
  • roasted squash
  • 1/2 cup freshly grated parmesan cheese
  • 1 1/4 cups thinly slice gouda cheese

Instructions

  1. Preheat oven to 375 degrees F. Once you have your squash cut into rings, scoop the seeds out of the middle of each. Add to a bowl, then drizzle olive oil and salt over top. Rub into squash with your hands. Bake for 8 minutes, then flip. Bake for another 8-10 minutes, until squash is fork tender. Remove from oven.
  2. Turn oven up to 400 degrees F. Brush each crust with one tablespoon oil, then rub with garlic, cut side down. Divide arugula, red onion, squash, and cheese evenly between the two pizzas. Put on a baking sheet and bake for 6-8 minutes, then broil for another 2 to get the cheese to lightly brown. Remove from oven and drizzle with the remaining tablespoon of olive oil.

    Yes to pizza being love, lol! I’m not sure why, but pizza night always feels special. And this pie is one heck of a looker! I can’t get enough delicata (ever!) and I bet it’s perfect paired with Gouda and arugula. I’ve never tried Udi’s crust, but I am a big fan of their products in general so I’ll have to look for it! xoxo

    Beautiful little pizzas with such a balance of ingredients! I’m all for homemade crust, but sometimes it’s just so nice to simplify. And I haven’t had gouda in forever! Sounds so good to me right now along with your pizza. :)

    I want to plant my face in this beautiful winter pie! I’ve never tried using Udi’s gf pizza crust before, but I LOVE the browning in your photos! Definitely picking some up in the freezer aisle the next time at I’m at the grocery store!
