Radish and Basil Compound Butter

Radishes can be a tough one for some people to like. They sure don’t get the same love as spring vegetables like asparagus, carrots, or delicate spinach leaves. Paired with butter though, how can you go wrong!

I grew up eating my grandmother’s fresh baked bread, smeared with salted butter and slices of crispy radishes. Using that as inspiration, I created this Radish and Basil Compound Butter. So easy and delicious, yet quite gourmet sounding.

You can listen to me talk about radishes and other ideas on the Fresh and Local Show’s podcast here, broadcast from the Minneapolis Farmers Market. Get there soon to pick up the ingredients for this fun radish recipe!

Breakfast Radishes

Radish and Basil Compound Butter

-2 or 3 small radishes finely minced
-4 basil leaves, julienned
-1/4 t sea salt
-1 stick butter, softened

Let butter sit out for about 1 hour to soften. Mix in radishes, basil leaves, and salt. Spread on a piece of fresh bread or put a dollop on a grilled steak….butter heaven!

I love a good bread, toasted and topped with shredded radishes. In fact, that’s my breakfast for the next few days atop goats milk sourdough. It’s going to be a great start!

yum, goat cheese with radishes also sounds very good! this recipe brings my mind back to when we went to your cabin last fall and ate buttered bread topped with radishes and salt :) that was a great weekend.
