Tossed in garlic and dried herbs (this is the secret, fresh herbs burn!), this air fryer butternut squash is perfectly flavored with crisp edges and a tender bite.
Add cubed squash to a bowl and toss with olive oil, salt, garlic powder, and Italian Seasoning.
Preheat air fryer to 375 degrees F. If your air fryer has trays put them on middle and lower racks. Place squash in your basket or on the trays.
Cook for 8 minutes, then shake. (Swap trays if using them.) Cook for another 8 minutes. Check to see if squash is tender and a fork can easily pierce through. If not, cook for 2-3 more minutes, or until you can easily pierce with a fork. (Each air fryer is different, so it will AFFECT COOKING TIME. In the end, you're going for crispy edged, tender inside cubes of squash.)
Remove finished squash from oven and toss with toasted pepita seeds, taste and add salt to squash if needed. Enjoy!

*If you have an air fryer rotisserie basket, you can add seasoned squash to the basket, and cook for 24 minutes at 400 degrees F on the air fryer setting.
