Crispy Roasted Cauliflower with Savory Peanut Sauce

Tender roasted cauliflower is tossed with a savory thai peanut sauce, lime juice, and and prunes or dates!

Ingredients

  • 1 head cauliflower, cut into small florets
  • 3 tablespoons olive oil*
  • 1 1/2 teaspoons kosher salt
  • 1/4 cup thinly sliced prunes or dates
  • Cilantro, crushed salted peanuts, and lime juice for garnish

Peanut Sauce

  • 3 tablespoons natural peanut butter
  • 3 tablespoons warm water
  • 2 teaspoons rice wine vinegar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon red pepper flakes
  • 1 clove garlic, grated
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon tamari or soy sauce
  • 1 teaspoon maple syrup

Instructions 

  • Preheat oven to 425 degrees F.
  • Toss cauliflower with olive oil and salt. Spread on large baking sheet, being sure not too crowd.
  • Roast for 25-35 minutes, stirring once, until cauliflower is golden brown, has crisp edges, and is tender when a fork pierces through it.
  • While cauliflower is roasting, whisk together peanut sauce ingredients.
  • Remove cauliflower from oven, and put on a platter. Sprinkle with prunes, cilantro, and crushed peanuts. Drizzle with peanut sauce. Give entire dish a big squeeze of lime juice all over top. Serve.

Notes

*Do not skimp on the olive oil. It needs this to properly brown and impart flavor.
