Cilantro, crushed salted peanuts, and lime juice for garnish
Peanut Sauce
3tablespoonsnatural peanut butter
3tablespoonswarm water
2teaspoonsrice wine vinegar
1tablespoonfresh lime juice
1/2teaspoonred pepper flakes
1clovegarlic, grated
2teaspoons toasted sesame oil
1tablespoontamari or soy sauce
1teaspoon maple syrup

Instructions
Preheat oven to 425 degrees F.
Toss cauliflower with olive oil and salt. Spread on large baking sheet, being sure not too crowd.
Roast for 25-35 minutes, stirring once, until cauliflower is golden brown, has crisp edges, and is tender when a fork pierces through it.
While cauliflower is roasting, whisk together peanut sauce ingredients.
Remove cauliflower from oven, and put on a platter. Sprinkle with prunes, cilantro, and crushed peanuts. Drizzle with peanut sauce. Give entire dish a big squeeze of lime juice all over top. Serve.
Notes
*Do not skimp on the olive oil. It needs this to properly brown and impart flavor.
