Melty Sourdough Grilled Cheese

This simple grilled cheese sandwich has superb flavor because it's made with sourdough bread and two delicious cheeses; sharp cheddar and gouda! These cheeses melt well and taste great. Cooking it over medium heat allows you to achieve a golden, crisp crust that leads to the perfect bite.

Ingredients

  • 2 slices sourdough bread, cut 1/2 inch thick (no thicker)
  • 1 to 2 tablespoons mayonnaise
  • 1 1/4 ounces sharp cheddar cheese, grated
  • 1 ounce gouda cheese, grated
  • 2 teaspoons butter (a large knob)

Instructions 

  • Place cast iron skillet on burner and bring to medium heat. Spread mayonnaise on one side of each slice bread, covering it with a thin layer all the way to the edges.
  • Add butter to pan and swirl pan. Put one slice of bread, mayonnaise side down, into the pan. Place shredded cheese on top, followed by the other slice of bread, mayonnaise side facing the sky. Turn heat down to medium low and cover the skillet.
  • Let cook 3 minutes, then check the sandwich to see if it is turning golden brown. If not, cook for another minute, pressing down on the sandwich with a spatula. Then flip and cook another 3 to 4 minutes (uncovered), until cheese is melted, pressing down a bit until both sides are golden brown.
  • Remove from pan and sprinkle top with flaky salt. Cut in half and enjoy!
