30-Minute Roasted Radishes with Walnut Crunch

Roasting radishes takes away their spicy bite and transforms them into something deliciously tender, mellow, and a little sweet. This easy recipe is a show stopper, complete with a salty, crunchy topping made from nutritional yeast and walnuts that completely elevates this side dish.

Ingredients

  • 2 bunches of radishes 15-20 radishes, trimmed and cut in half
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • freshly cracked black pepper

Nutritional Yeast Crunch

  • 1/4 cup roasted walnuts, finely chopped
  • 1 tablespoon nutritional yeast
  • 1 tablespoon sliced basil or parsley
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon onion powder

Instructions 

  • Preheat oven to 450 degrees F. Line rimmed baking sheet with parchment paper. Toss cut radishes with olive oil and salt. Spread onto pan, cut side down. (This helps them brown.)
  • Roast for 16-18 minutes, until soft and fork tender.
  • Meanwhile, mix all ingredients for nutritional yeast crunch together in a small bowl.
  • When radishes come out of the oven, put them in bowl or on a plate while they are warm and sprinkle liberally with the nutritional yeast mixture. Serve warm or at room temperature.
