Sweet & Spicy Roasted Cauliflower with Peanut Sauce

A roasted cauliflower dish that's both sweet and spicy, with a thai peanut sauce and prunes.

  • 1 head cauliflower cut into florets
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt
  • 3 tablespoons natural peanut butter
  • 3 tablespoons warm water
  • 1 1/2 teaspoons white wine vinegar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup sliced prunes
  • Cilantro crushed peanuts, and lime juice for garnish


  • Preheat oven to 400 degrees F.
  • Toss cauliflower with olive oil and salt. Spread on large baking sheet, being sure not too crowd.
  • Roast for 35 minutes, stirring once, until cauliflower is golden brown.
  • While cauliflower is roasting, whisk together peanut butter, water, vinegar, lime juice, red pepper flakes, and 1/4 teaspoon salt.
  • Remove cauliflower from oven, and put on a platter. Sprinkle with prunes, cilantro, and crushed peanuts. Drizzle with peanut sauce. Give entire dish a big squeeze of lime juice all over top. Serve.
