Vegan Raspberry Beet Smoothie

A nutrient dense raspberry beet smoothie with just the slightest hint of beets, countered by sweet raspberries and creamy coconut milk. A smoothie without bananas!

Ingredients

  • 1 cup coconut milk
  • 1 1/2 to 2 tablespoons grated red beets
  • 1 scoop Megafoods Daily Energy Boost powder (optional)
  • 2 tablespoons maple syrup (plus more if desired)
  • 1 cup frozen raspberries
  • pinch of salt

Instructions 

  • Add coconut milk, beets, maple syrup and powder to a blender.
  • Add raspberries and pinch of salt.
  • Blend with a high powdered blender until smooth, adding a tablespoon of water if needed to get to consistency you'd like.
