Miso Butter Carrots

Roasted carrots tossed in miso butter and sesame oil.

Ingredients

  • 1 pound carrots cut into 1/2 thick slices on the diagonal
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 4 tablespoons softened butter
  • 2 tablespoons white miso
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon red pepper flakes

Instructions 

  • Preheat oven to 375 degrees F. 
  • Toss carrots with olive oil and salt, and spread onto baking sheet. Roast for 30 minutes, flipping halfway through. 
  • In the meantime, mix butter, miso, and sesame oil in a small bowl until fully combined and smooth.
  • When carrots are done roasting, place in bowl and add 3 tablespoons of the mixture, plus sesame seeds and red pepper flakes. Serve. 
  • Remaining miso butter can be kept in refrigerator for 2 weeks.
