Raspberry Beet Smoothie

A nutrient dense vegan beet smoothie with just the slightest hint of beets, countered by sweet raspberries and creamy coconut milk. This is a smoothie without bananas! It comes together in about 5 minutes for a healthy snack or breakfast.

About this Vegan Beet Smoothie:

It’s cooling and fruity, with just a slight hint of beet, and I mean slight… the perfect, herbaceous counter to the sweet raspberries and coconut. The color….. a hue of magenta that jumps out and glistens, just like these beet deviled eggs!

The bright pink nearly makes my heart nearly skip a beat each time I watch it transform from raw ingredients to creamy smoothie heaven.

Beyond knowing that the raspberries and beets would create such a glorious color, I choose them for their blood boosting, iron rich properties. Deeply pigmented red foods such as beets, cherries, raspberries, goji berries are rich in iron*. For our bodies to absorb plants sources of iron, we need to take in Vitamin C at the same time. In this smoothie, it’s the coconut milk!

I also added MegaFood Daily Energy Boost, the powder being made of B12, beets from , green leaf tea, ashwaganda root, bacopa root – a combination that supports balanced blood sugar levels and energy, and mental clarity.* All things we can surely use throughout our day.

A smoothie without bananas:

There are no bananas or greens hiding out – typical “healthy” smoothie components. Just berries, beets, and a boost! The raspberry and maple syrup bring the sweetness, rather than the usual banana.

How to Make a Beet Smoothie:

  1. Grate 1 1/2 tablespoons of a red beet.
  2. To a blender, add coconut milk, beets, maple syrup and to a blender.
  3. Then add raspberries and pinch of salt.
  4. Blend with a high powdered blender until smooth, adding a tablespoon of water if needed to get to consistency you’d like.

What should I use to peel beets?

I like using a y-shaped peeler, but a pairing knife will work too. The skin should be peeled because it can be a bit gritty.

Can I use roasted beets instead of raw beets for this smoothie?

Yes, roasted beets will bring more sweetness to the smoothie and deep flavor. If you have them on hand, use them!

Ingredients

  • 1 cup coconut milk
  • 1 1/2 to 2 tablespoons grated red beets
  • 1 scoop Megafoods Daily Energy Boost powder (optional)
  • 2 tablespoons maple syrup (plus more if desired)
  • 1 cup frozen raspberries
  • pinch of salt

Instructions 

  • Add coconut milk, beets, maple syrup and powder to a blender.
  • Add raspberries and pinch of salt.
  • Blend with a high powdered blender until smooth, adding a tablespoon of water if needed to get to consistency you'd like.

    Where do you buy coconut butter?? I’ve looked at numerous stores & have never found it.

      Hi Kathy! You can find at Whole Foods or at a co-op, usually buy the coconut oil. Sometimes they put it by the nut butters as well. You can also get it on Amazon.

    i’m right here with this gorgeous smoothie, amanda. cosmic because it was sometime recently that i queried in my mind if raspberry and beet would do it – and you’ve given proof that they totally do. i really, really like this combination. not to mention the hue! beautiful.

The combination can sometimes be a struggle, so I’m grateful for Mega Foods. I’ve been taking their Adult B Centered as well, which I know I lack because I eat a smaller amount of meat compared to vegetables. all the love! xo
